Red rice from the hill terraces of Uttarakhand
Also known as: Red rice, Lal chawal
Pahari Red Rice is grown on the hill terraces of Uttarakhand and sold as whole grain with the bran left on. It cooks to a firm, slightly chewy grain with a nutty flavour and takes longer than polished white rice.
Uses
- Plain boiled rice served with dal
- Pulao and khichdi
- Served with Kumaoni dals and vegetables
- A festive sweet cooked with jaggery
