Barnyard millet from Uttarakhand
Also known as: Jhangora, Indian barnyard millet, Sanwa
Jhangora is barnyard millet, a small, pale hill grain of Uttarakhand sold as whole grain. It has a mild, slightly nutty flavour and a soft, gentle chew, and is cooked much like rice.
Uses
- Cooked like rice with dal and vegetables
- Jhangore ki kheer, simmered with milk and sugar
- Khichdi
- A light, quick porridge
