Also known as: Timur, Timru, Timoor, Himalayan Sichuan pepper
Timur (Zanthoxylum armatum) is a Himalayan pepper related to Sichuan pepper, with fresh grapefruit and citrus notes and a light, tingling finish instead of heat. Best used whole, crushed just before cooking.
