Also known as: Ragi, Mandua, Madua, Nachni, finger millet
Ragi, called madua or mandua in Kumaon, is finger millet: a small, dark reddish-brown grain sold whole. It has an earthy, slightly malty flavour and is traditionally milled into flour.

- Madua roti, eaten with ghee

- Dosa, rotis and baking with the flour
